Summary: <br> Churrasco is Brazil’s version of cowboy barbecue. <br> Invented by the gauchos, the Brazilian horsemen who herded cattle in the Rio <br> Grande do Sul region of Southern Brazil, Churrasco was originally a method of <br> spit roasting cuts of meat by the fire.
