Summary: I was finally able to finish off the 4 major competition meats tonight in the BBQ Round Table by covering chicken! Pit master of Uncle Bubba’s BBQ Kevin Tarazewski, owner of Q Barbeque and pit master of the Cool Smoke team Tuff Stone and pit master of the Pellet Envy cooking team Rod Gray joined me to talk about everything related to competition chicken. Segment one was dedicated to all of the pre-cook or preparation items, the second segment was dedicated to what happens during the cook and the third segment was what they did after the chicken was finished. I was also able to ask them specifically about “bite through” skin and if garnish should be voted in as “mandatory” for the rules of KCBS. This show has a tremendous amount of info in it and will help both the competitive bbq’er as well as the backyard cook!
