Summary: During the 2nd segment I will be joined by John Patty, Pitmaster of JP Custom Smoke barbecue team. John was part of the show during the competition round table shows that aired earlier this year and earned a spot to come back for his own segment tonight. He will talk about his year so far in competition, what's good and bad with the KCBS as it sits right now, how his custom pit building business is going and he will offer up some advice for the folks looking to break in to the circuit. john is very knowledgeable and always brings good energy tot he show. During the 3rd segment I will be joined by a true legend in the world of BBQ, Jim Minion. Jim is 1/2 of the bbq team that makes up 2 Loose Screws, he owns a high end bbq catering business and was finally give credit (By Weber) for his method of firing up many of the charcoal cookers in use today (The Minion Method). Jim has had years of experience with Waygu briskets and other high end products and is a true expert when it comes to this type of meat. With the emergence of TV shows revealing what many contestants are using out there these days, I will ask Jim if the Waygu brisket craze is just a fad, if it can really make or break a team at a competition, if its higher price tag is worth it, if the mouth feel and flavor profile is different and the best way to go about cooking it.
