Summary: <p>We started this back in 2012/2013 with a archiving research team led by Prof. Moss from Glasgow university.</p> <p>Starting with the list of the 100+ closed distilleries we first needed to know which ones we could legally register. There’s no point researching one if we can’t do anything with it at the end.</p> <p>We then created a shorter list of distilleries which covered the regional differences of single malts. island, coastal, highland, lowland…</p> <p>The team then went to work researching these closed distilleries to see what information was still available in a variety of archives around Scotland. Old excise records were used to gain an understanding of the casks used. Drawings, photographs, newspaper articles, whisky books (eg Barnard), old letters, maps were all used to get an understanding of the distillation, grain, yeast, location, peat, heating, water.</p> <p>While doing all of this it was important to find out what the reputation of the whisky was. We wanted only distilleries which had a sterling reputation for making great whisky.</p> <p>An added benefit of the research was a trove of wonderful and often colourful stories of the people associated with the distilleries at the time. Such as Peter Dawson and Alexander Bonthrone.</p> <p>All the information is boiled down to create a very detailed profile of what the whisky should have tasted like originally. Then, as it’s not possible for us to recreate a 1800’s whisky exactly today. The team then theorises what the whisky would be like if they were still in operation today. A detailed profile of this modern day “homage” is then created. An expert blending team then has a rigorous (read heated argument) over which single malts need to be brought together to create this profile.
